Mứt dừa dẻo vị lá dứa không tốn nhiều thời gian, chỉ cần chọn được nguyên liệu dừa non dẻo là bạn có thể tiến hành làm ngay vài mẻ mứt dừa dẻo thơm ngon với màu xanh lá dứa bắt mắt.
Hòa tan 50g muối vào 1 lít nước. Cơm dừa non gọt bỏ phần nám, ngâm vào nước muối vừa pha khoảng 3-5 tiếng đồng hồ rồi vớt ra sả sạch với nước lạnh.
Cắt cơm dừa non thành các sợi dài rồi trộn cùng với 500g đường. Cho lên bếp đun sôi rồi tết bếp, để yên 5-8 tiếng cho dừa ngấm đường.
Bật bếp, sên nhỏ lửa đến khi dừa gần sệt nước thì cho tinh mùi lá dứa, vani vào sên đến khi đường kéo sợi già thì tắt bếp và vẫn đảo dừa liên tục cho đến khi dừa nguội sẽ tự động kết tinh đường. Để mứt dừa nguội có thể cho vào hũ bảo quản kín dùng dần.
